NFPA 96, Standard for Ventilation Control and Fire Protection
NFPA 96 is basically a guideline for making sure commercial kitchens are safe from fires. It tells you how to set up, use, and keep everything in these kitchens in good working order. This includes all the cooking gear, the hoods that suck out smoke and grease, the ventilation systems, fire extinguishers, and how close flammable stuff needs to be to heat sources.
These rules are for any kitchen where food is cooked commercially, whether it’s a fancy restaurant or even a place that uses regular kitchen appliances for cooking.
The newest version of NFPA 96 has a new part for food trucks or temporary cooking setups, especially those using propane. It also makes it clearer who’s in charge of checking, cleaning, and fixing up these kitchen spaces.
